Can't be done. To send to a different email you need a separate CF7 form. Each CF7 form is stored as a unique item in the WP database. You can use the Copy link to easily create multiple copies of an existing form.
Also messing with the WP database in this way (particularly if you have to ask others how to do it) can be very risky. Much better IMHO to let the plugin and WP manage all changes in the WP database.
